Isoparms in Cartoon dog

Hi
I'm stuck 6 1/2 minutes into the first dog tutorial video. I am meant to be adding in isoparms but I don't have the 'edit nurbs' tab at the top of my screen.
I've tried to find some kind of options where I can choose what tabs are at the top of my screen, but no luck.
Could someone please tell me how to get it there?

Select the Surfaces menu set at the top left of the GUI and you will see Edit Nurbs right in the center of the top row of menu items.
